Vines grown with respect for Mother Earth, planted in Burdigalian clay-limestone soils.

Winemaking process
100% destemmed, the grapes infuse with the skin for a seven-day fermentation. Produced with indigenous yeasts, the Karate Caaaaaaat wine has no inputs at any point in the entire process. No chaptalisation, no deacidification/acidification, no colouring, no thickening… basically, we respect ourselves and we respect you. Matured on fine lees in steel and concrete vats. Unfined and unfiltered. No added sulphur (Total SO2 <20mg/L). Natural wine.

Winegrower
This wine is a “four-handed” wine. It was created by Christophe Kaczmarek and Michel Maestroujuan, a winemaker from the Domaine Entras, at the heart of the Côtes de Gascogne.

Michel represents the 3rd generation of winemakers on this beautiful, 30 hectare estate. In 2020, they succeeded in converting the entire estate to Organic Agriculture.

Christophe is crazy about wine and the creator of the Caaaaaaat collection.

The wines are made, assembled, bottled and packaged on the estate. From the vine to the cellar, everything is done with the aim of respecting nature, regenerating the soils, promoting biodiversity.
